Eye of Ribeye is the central muscle of the ribeye after the cap and outer portions are removed. It has fine marbling through the muscle and a consistent, tender bite. Best cooked hot and fast on a grill or cast-iron skillet, then rested before serving with simple seasoning or butter.

We ship to all 48 contiguous U.S. states (excluding Alaska, Hawaii, and U.S. territories). Depending on your location, orders are fulfilled through one of two carriers: UPS 2nd Day Express Air, shipping Mondays and Tuesdays, or Speedy, shipping Tuesdays only. Regardless of carrier, your order arrives packed in an insulated cooler box with gel packs and dry ice to maintain temperature. Product may arrive partially thawed — this is completely normal and safe to refreeze.
