Refried Beans

INGREDIENTS

1 ½ cup dried black beans

7 cups water

1 white onion, peeled and halved

2 cloves garlic, smashed

â…“ lb bacon

Salt

INSTRUCTIONS

Put beans in a large pot along with water, half the onion, garlic, and salt to taste. Bring to a boil and let boil for 15 minutes, then reduce heat to a simmer. Cover with lid and cook on low until beans are soft. This should take 2.5-3 hours. Drain the beans and reserve 2 cups of the bean broth.

Towards the end of cooking time, dice the other half of the onion and cut your bacon into small strips. Begin by frying the bacon bits until they are lightly crisp and then add onion, sauteeing until soft. Once the beans are drained ready, add them to the pan and begin to mash the mixture with a large fork or potato masher, adding more broth as needed. The more you mash, the smoother the texture. Salt to taste. Serve.
