Steak Fajita Nachos

Fajita steak meat
Tortilla chips
Cherry tomatoes, quartered
Scallions, sliced
1 Can black beans, rinsed and drained
Avocado, diced
Chihuahua cheese, shredded
Cheddar cheese, shredded
Pickled jalapenos, finely diced
Cilantro, roughly chopped

Turn on oven broiler and let heat for a few minutes. Spread the steak fajita meat out on a rimmed baking sheet and broil for 3-5 minutes, checking often so it doesn’t burn, until the meat is browned with some crispy corners forming. Remove from the oven, cut into smaller pieces and set aside. Preheat the oven to 375 degrees. On a rimmed baking sheet, assemble chips in a thin layer and cover with a layer of shredded cheese. Spread the cherry tomatoes, scallions, black beans, pickled jalapenos, and steak evenly over the chips and top with a little more shredded cheese. Cook in the oven until the cheese is melted through - approximately 5-8 minutes - checking often so it does not burn. Remove from oven and sprinkle with the chopped cilantro and a squeeze of lime juice.Â
