After toasting your buns, spread some dijon mustard in the buns. Grill hot dogs, starting with cut side down. Cook for 1-2 minutes and then flip and place the hot dogs with cut-side up in their buns. Fill the slice down the dog with a thick layer of caramelized onions and cover with gruyere. Place hot dogs in their buns back on the grill in indirect heat until the cheese melts and serve.
